Middle Eastern chicken & apricot stew

A stew doesn't have to be a long time cooking, this speedy little number can be made after work

Method

  1. Heat 1 tbsp olive oil in a pan. Add the onion, ginger and garlic, and season. Cook for 8 minutes and then add the chicken. Cook for 5 minutes and then add the spice blend, lentils, apricots and lemon juice.
  2. Stir in 750ml of stock or water and simmer for 15 minutes. Stir in the herbs and pomegranate seeds (if using) and serve with rice or couscous.

    Really delicious, quick and easy. I've cooked it several times for friends and everyone has loved it. Its also great that it is low fat.

    This is a fantastic recipe: fruity and sweet yet spicy! I did it with tagine powder (authentic Moroccan) rather than the suggested spices and without the pomegranate and it worked out well. Goes very well with seasoned cous-cous and almonds and chick peas too! I did find that the chicken didn't really brown properly with the timings given in this recipe though. A bigger pan may have helped. I also found it was quite watery after the suggested 15 minutes, and it helped to let it bake slightly in the oven to finish it off.

    really good mid week meal. tastey, quick and low fat. you can really taste the apricots and the lentils give the sauce a really lovely thick consitancy. It looks nothing like the picture, which actually put me off for ages.

    absolutely gorgeous! really easy and quick, low fat and really tasty. My other half is a curry fiend, but really loved this!! will definitely do this again, may even try with lamb after reading other peoples comments.

    This was amazing! Dont even think about not adding pomegranate, it really adds to the taste. True it does not look pretty so plenty of the afore mentioned fruit and fresh herbs will make it look more visually appealing.

    Seved with Harissa couscous but there were too many flavours going on. Will do with plain next time. Filling and tasty though !

    Tried this last night, it was lovely and didnt make me feel bloated afterwards.....Will use natural apricots next as they have a more pungent flavour than the orange ones with nasty Sulphur Dioxide!!! It was spicy warm rather than spicy hot. Plus, I have never used Ras-El-Hanout before and I loved it!!! If it comes out too watery I suggest putting in more red lentils to soak up the excess stock...also I browned the chicken off in a seperate frying pan before adding which made it look more appealing to my kids. But a lovely, quick easy recipe, will def make it a part of our family menu.
