Caramelised onion soup with gruyère croutons

Under 300 calories, low-fat and quick to make after work, this is French onion soup without the fuss

Method

  1. Put the onions, rosemary and 1 tbsp of oil in a large pot with a pinch of sugar and some seasoning. Cook for 20 minutes on a medium heat until caramelised. add the beef stock and cook for another 10 minutes.
  2. Grill the bread topped with the cheese. Serve the soup in large bowls with the warm croutons.

    really easy recipe to follow and very tasty. Make sure that the cheese used is mild as we used a very mature cheddar and it was a bit overpowering for the soup.

    extremely delicious soup - RECOMMENDED!! I changed it slightly - i made some small square croutons and had that in a little dish and then grated some cheese and oput that in another dish. Sprinkle on the amount you want and then ENJOY!!

    Didn't like this at all, ended up throwing it away. Maybe it was because I used red onions and vegetable stock? The crouton was really nice though, it tasted like the soup and that was nice.

    i make this all the time, have never used rosmary or sugar before, so im assuming thats so the onions dont go sour from cooking them faster? am trying these in it tonite with friends:)

    I follwed the recipe the first time I made it, but now only use 2 onions if making for two as I found 4 too many. This is by far the easiest, quickest and best tasting Onion soup I have ever had.

    Lovely soup but I add a litre of stock instead of half that amount as I find it too thick. I also use the equivalent of 3 pinches of brown sugar. Grated Gruyere gives the soup the perfect overall and authentic taste and if possible should be used in preference to any other cheese.
