Sweet potato & chorizo quesadillas

Fill tortilla wraps with sweet potato, spicy Spanish sausage and feta cheese then finish on a griddle pan

Method

  1. Heat oven to 200C/180C fan/gas 6. Pierce the potatoes a few times each and put on a baking tray. Cook for 50 mins until really soft. Leave to cool slightly.
  2. Scoop the sweet potato flesh out of the skins into a bowl. Mash with the coriander, season and gently fold through the feta. This can be done earlier in the day - cover and keep in the fridge. Heat a large griddle pan.
  3. Spread the sweet potato mixture over half of each tortilla, top with chorizo slices and fold the other side over. Cook on the hot griddle pan for 3 mins each side until golden. Cut each tortilla in half and serve.

    always wary of trying recipes with no reviews but decided to give it a go. The filling looked bland and dry and thought it was going to' be a huge disappointment. Was going to put some slices of tomato in but decided to stick to the recipe and was pleasantly surprised. Was much tastier than it looked and pretty filling. Will definitely make again

    I made this using cubed chorizo (which I pre-fried) and a low-fat feta. The flavours were really good but the mixture was a little dry. I'll use proper feta next time which might be a bit more 'melty' and the thin-sliced chorizo. I added some spring onion and chopped chilis as I had them handy.

    I sped this up a bit to turn it into a quick Friday night snack. I boiled the sweet potatoes in the microwave, adding paprika and chilli powder to the water to give it some kick. Added more of the same during mashing. I reduced the fat a little bit by using garlic and herb cream cheese. Probably wasn't as cheesey as it was supposed to be, but the flavours suited me. Old Thumper - I sliced and fried the chorizo just because I prefer the texture.

    This recipe doesn't really take an hour to do if you take some shortcuts. As a student at university quick food is the way to go so I simply put a sweet potato in the microwave till soft instead and used chorizo, feta, red pepper, parsley and chilli flakes. Because of the comments saying it was dry I added a little butter and the result was lovely. Will be having it again soon!

    Being a vegetarian left out the chorizo and added tomatoes and green chilli...lovely combination of feta cheese and sweet potato. Will definitely make again

    So nice, agree with the people above; microwave the sweet potato until its soft (take less than 5 mins and that was in big chunks) and then add in the rest of the ingredients. I didnt put coriander in, as I had none in, but went for smoked paprika instead. Was absolutely gorgeous. Recommended - A great quick warming dinner!

    Fantastic meal, very filling. I don't like feta so used mature cheddar which worked well. I also agree about cooking the sweet potato in the microwave and adding chilli flakes for that extra bit of spice, depending how spicy your chorizo is!
