Chilli beef noodles

Method

  1. Place the stock, ginger, chilli and spring onions in a large saucepan and bring to the boil. Meanwhile, heat a griddle pan until very hot and brush the steak with the oil. Griddle the steak for 2 mins each side for medium-rare. Transfer to a chopping board and leave to rest for 1 min, then thinly slice.
  2. Add the pak choi to the stock, then the noodles, bring to the boil and simmer for 3 mins until tender. Ladle the stock, noodles and pak choi into large serving bowls and top with thin slices of steak.

    Really Tasty! Quick and easy midweek recipe. A great way to use the Pak Choi i received in my veg box.

    i found that there was far too much for two people. i would use less stock, mince the chilli and ginger, and add some garlic to make a tastier broth. cooked the steak rare as it continues to cook in the hot broth.

    Yummie! Very easy and simple, had a good friend over, who can often be hard to please but she loved it!! I agree that there was a huge amount for two people, as noodles are very filling. Maybe less noodles and more ginger next time.

    I agree with one of the other comments, this is way too much for two people - 300g of noodles is enough for three and I am not sure why I still went ahead and put them all in! I also added a thinly sliced red pepper. I think this dish has real potential but the quantities need to be looked at.
