Roasted apples & carrots
Rosie Lovell's side dish is rich and sweet with a taste of caramel from the apples

- Heat the oven to 180C/fan 160C/gas 4. Put the carrots and onion wedges in a non-stick baking tray. Pour over 2 tbsp olive oil and season with sea salt, and then place in the oven for 30 minutes.
- Meanwhile, core and quarter the apples. add these to the baking tray, turning them in the hot oil. Return to the oven for a further 40 minutes until they are crisp and a little brown at the edges. Season with more salt for extra bite before serving.
