Ingredients

  • 3 slices granary bread
  • 1 large handful watercress
  • 1 carrot, peeled and coarsely grated
  • small squeeze lemon juice
  • 1 tbsp olive oil
  • 2 dessertspoons reduced-fat houmous
  • 2 tomatoes, thickly sliced

Method

  1. Toast the bread. meanwhile mix the watercress, carrot, lemon juice and olive oil together. In a small bowl spread the houmous over each slice of toast. Top 1 slice with the watercress and carrot salad, sandwich with another slice of toast and top with the tomato. Lay the final slice of bread, houmous side down, then press down and eat as is or cut the sandwich into quarters.

i did not have most of the ingredients listed so changed it. I made home made houmous and changed the vegetables.I toasted normal brown bread 3 slices like said,then on each slice on one side,i spread a bit of butter like you do with toast then added a drop of houmous and spread it on each.In a bowl i mixed lettuce,spinach and rocket and added a bit of caesar salad dressing to give it some flavor. Then shared it out on each slice of bread and put together.It would be nice with some slices of cheese to or though i didn't do this as don't eat cheese that much.I thought it was nice and healthy.

This was fantastic even my husband who wouldnt enjoy a meal without meat/chicken loved it. Made a slight tweak though. Replaced one carrot for oven roasted yellow pepper and baby spinach instead of watercress. And used soft wholemeal bun kept everything else same. Reallu quick, healthy and delish!!

I never really enjoy hummus on sandwiches, although with the bread being toasted it looks more appealing.

We had this for lunch recently and it was fantastic. We enjoyed it so much that we've already had it twice this week!

We did it following the recipe as above although we used white bread and made our own homous and it was very enjoyable. We had it with a side of potato salad and really enjoyed it. I think many other sides would work with it as well from crisps to many other types of salads.

Highly recommended lunch and lots of options to keep it varied, especially by changing the sides you have with it. I can see us having this lunch a lot this summer and I am so pleased we found this recipe. I have never been a fan of club sandwiches before but really loved these!

Really nice, I used chopped rocket instead of watercress and it was very tasty! gonna build on it and add mushrooms next time as well I think, overall great recipe, defo make it again.

jjbell100 I think you will find that the creamy looking layer is houmus. I love this recipe as it is easy and filling.

Boring. Try roast vegetables, red kidney beans and hummus in a wrap with lovely salad instead. Or if it has to be a club sandwich try chargrilled portobello mushroom and red peppers with fresh tomatoes, sliced avocado and slightly dressed salad leaves.
