Method

  1. Toast the bread. meanwhile mix the watercress, carrot, lemon juice and olive oil together. In a small bowl spread the houmous over each slice of toast. Top 1 slice with the watercress and carrot salad, sandwich with another slice of toast and top with the tomato. Lay the final slice of bread, houmous side down, then press down and eat as is or cut the sandwich into quarters.

    Boring. Try roast vegetables, red kidney beans and hummus in a wrap with lovely salad instead. Or if it has to be a club sandwich try chargrilled portobello mushroom and red peppers with fresh tomatoes, sliced avocado and slightly dressed salad leaves.

    Really nice, I used chopped rocket instead of watercress and it was very tasty! gonna build on it and add mushrooms next time as well I think, overall great recipe, defo make it again.
