Method

  1. Place mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.

  2. Meanwhile, make the salsa and mayo. Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the barbecue.

  3. Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.

I made them with little less Thai red curry paste as it was hot one. To make more healthy I used one cal oil spray on baking sheet and cooked in oven 190oC for 25/30 mins. Also first time I made without the egg and used oats instead of breadcrumbs.

These were really quick and tasty, my kids also enyoyed them.I added some chopped coriander which looked nice !!

Seriously good, even my partner who was fairly sceptical about bland turkey mince thought these were really tasty. Very good food and great value, ideal if like me you are crazy about thai curry paste but want to feed your family something a bit different than yet another thai curry!

These were pretty tasty: not quite as good as beef burgers, but nice as a change (and a healthier alternative). I substituted green Thai curry paste as that's what I had in the fridge, which turned out to be a bad idea - they still tasted delicious, but green burgers are not attractive!

This recipe is lovely, but we did not include the relish. We added more spices, and kept the spring onion chunky. We have cooked them inside and on the barbeque, and they were both delicious. Can't wiat for summer so we can have them again!

Inspite of adding more spices and onions, did not find this recipe tasty. Will not be doing it again.

Good midweek meal, makes a lovely (and considerably more virtuous) alternative to standard burgers. One word of advice - don't be shy with the flavourings, as turkey mince will take an awful lot of spice before you can really taste it.
