Skinny chocolate & cranberry muffins

These gorgeous low-fat muffins make a great coffee morning treat, best served warm from the oven

Method

  1. Heat oven to 180C/160C fan/gas 4. Line a 12-hole muffin tin with paper cases. Sift the flour, cocoa, baking powder and cinnamon into a bowl. Stir in the sugar and cranberries. Microwave the chocolate on Medium for 1-1½ mins, stir, then set aside.
  2. Mix the yogurt and milk with the oil and egg. Make a well in centre of the dry mix and gently stir in the liquid. Drizzle half the chocolate over the mix, gently fold in until swirled, then repeat with the remaining chocolate. Take care not to over-mix. Spoon the mix into the muffin cases and bake for 15-20 mins until risen and firm to the touch.

    I make these fairly and they go down a treat, to make things easier i use chocholate chips, they dont need the full 25 minutes, just until lightly golden.

    I have made these a few times now and think they are great; having tried to shed the extra stone I am carrying recipes like these have certainly helped feel as though I am still getting a treat without all the calories and fat. The next time I make them I am going to add the cranberries just before the chocolate as they tend to get a bit coated in flour, etc making me mix the whole thing rather more than muffins really like. PS - I only have 4 more pounds to hit the 1 stone loss....

    I found these muffins quite dry and they could've done with more sugar and/or chocolate as they were not quite sweet enough! Next time I will increase these ingredients as the recipe was actually quite nice. I included orange zest and a bit of juice too but it didn't really come through so will add more next time!

    I made them this week, I doubled the recipe and thought they were lovely. All my guests enjoyed them and found them to be sweet enough, not low fat tasting at all!

    hmmm. I wonder what they'd be like with dried raspberries instead of dried cranberries. I'm not a fan of cranberries.

    these were too dense and rubbery, and I can usually make nice fluffy muffins. I think that the yogurt drags them down, my usual recipe just uses all milk (skimmed works fine) and the same amount of sugar, oil and eggs so no I won't be making these again.

    Absolutely gorgeous, except i didn't have any chocolate or low fat yoghurt, so i skipped the chocolate and added raspberry fromage frais instead of the yoghurt.

    I used 70% cocoa powder and creme fraiche instead of yoghurt, and found they were actually quite tasty. Saying that however, they were a bit heavy but quite filling for the amount of calories they contain.

    Made these for the first time this evening and thought they were delicious! I will use dark choc chips next time and add some orange zest perhaps but I thought they were lovely and light and will definitely remake them.
