Eve's pudding

Here's a little reminder of a delicious British pudding you probably haven't eaten in years

Method

  1. Heat oven to 180C/160C fan/gas 4. Peel, core and slice the apples. Grease a large serving dish, about 2.5 litre/3 litre with 25g/1oz of the butter and tip in the apple. Scatter the raisins over the top.
  2. In a separate dish beat the remaining butter and sugar together for 10 mins until the butter turns pale and the sugar starts to dissolve. Beat in the eggs, then carefully fold in the flour with a large spoon. Spread the batter over the apples, then bake for 45 mins until golden. Serve with the custard, below.

Thick custard

Place 250ml full-fat milk, 250ml double cream and 2 vanilla pods, split lengthways, in a pan over a gentle heat for 10 mins to infuse. In a big bowl, whisk together 8 egg yolks, 100g light brown sugar and 1 tbsp cornflour, mixed with a little water. Pour over the hot milk mix, stirring all the time, then tip everything back into the pan. Cook over a low heat for 10 mins, constantly stirring, until thickened. Sieve before serving.

    Like it says hadn't had this in years, left out the raisins (out voted) added little grate of nutmeg, magic :-)

    This is delicious - the only problem I had was that I had far too much apple (maybe they were extra large?!!). I halved the recipe and two apples was ample for me.

    A bit bland, but if you add some mixed spice and or cinnamon, this dish is lovely. Esecially if you have diabetics in the family, as it doesn't contain too much sugar.

    I cooked this recipe last night and the sponge didn't rise. I added all the correct ingredients in the right quantities but the butter/sugar mix never blended well with the eggs. Does anoyone know why this might be? Thank you so much.

    I adapted this slightly ... and my version has a few extra calories ... but it tastes good!!!! I didnt use raisins but I sprinkled a mix of muscovado and soft brown sugar (approx 75g), cinammon, lemon zest and juice over the apple slices. Then I added a little cinammon to the sponge mix too. Rave reviews and clean plates all around!! Delicious!!!

    I added some extra cinammon to this for some extra flavouring and it was delicious! Really lovely easy pudding. I also had too much apple, so I ended up only using 4.

    This tasted delicious but the apples weren't cooked at the same time as the sponge - ended up taking the sponge off and cooking the apple some more. All the same it was delicious but next time I might cook the apple separately first.

    Perhaps Phillippa needs to cut the apple into thinner slices? This is a tasty and straightforward recipe - will definitely make again. I was worried that the full quantity of topping might not fit in my dish, so I only used 3/4 (3 eggs etc). I used about 2lb of apples for this reduced quantity of topping. It still made 6 servings though!

    This dessert is definatly must try even if you don't like sponge puddings or even apple its got some thing for every one and it all blends in well together. I don't like sponge products but this was fantastic and my guests loved it or they said they did. I will certainly make this again. Many thanks for putting it one
