Sticky thyme & mustard bacon chops

Method

  1. Season the bacon chops with pepper (no need to add extra salt). Heat the oil in a non-stick frying pan, then sizzle and brown the chops over a medium heat for 5 mins, turning once. Lift onto a plate.
  2. Add the butter to the pan. Once it looks foamy, stir in the onion and thyme, and fry very gently for 15 mins until the onion is soft and golden. Stir in the marmalade, mustard and stock, then simmer for 2 mins until it starts to thicken to a sauce. Add the chops back to the pan, simmer for 3 mins more, then serve.

    i had a gammon joint, used all the ingredients apart from the oil and butter and put in my slow cooker....delish!

    Yuk, Good Food Taste Team, what were you thinking? Looked really unappealing, and tasted worse - I like all the ingredients but I didn't like the combination at all.

    I have just cooked this dish but I have used what I had in,instead of marmalade I used rhubarb and ginger,instead of onion I used a salad mix of onion,carrot,red cabbage cut very thin.I served it with a baked potato and frozen peas.You have to try this everybody,it was Fab.Many thanks to Jane.
