Smoked haddock & cauliflower cheese

Could the comforting classic get any better? John Torode thinks so, and adds smoked fish, Gruyère cheese and spinach

Method

  1. Heat the oven to 200C/fan 180C/gas 6. To make the sauce, melt the butter in a pan, stir in the flour and cook for a couple of minutes. Gradually stir in the milk until you have a smooth sauce. Simmer for 3 minutes then stir in the cheese until melted. Cool a little, season, then stir in the egg yolk.
  2. Put the cauliflower in a pan and just cover with half milk and half water. Bring to the boil then simmer for two minutes. Drain well.
  3. Butter 4 heatproof dishes and divide the spinach between them. Mix most of the sauce with the cauliflower and divide between the dishes. Put a haddock fillet on top of each and finish with a little more sauce and more gruyère. Bake for 12-15 minutes until bubbling.

    Made this for supper last night. Simple easy dish. Lovely rich cheese sauce. I used half strong cheddar, half emmental. Next time I may add a teaspoon of english mustard to the sauce for a bit of a kick. We really enjoyed it. Lovely.

    Delicious, whether I follow the recipe to the letter or use it as inspiration it's a firm family favourite! I sometimes add a sauteed leek to the spinach and usually use semi-skimmed milk and cheddar. I also add some boiled potato cubes to the cauliflower if I want to make it a more substantial meal. I also leave out the egg from the cheese sauce and use half a teaspoon of Dijon mustard instead.

    To be honest this is cheaper, less faff and just as tasty when made with a normal white sauce and cheddar... good combination and nice and healthy :)

    Lovely dinner on a cold night. Agree with comments about the cheese sauce, any cheese sauce would do, I used cheddar and also added some mustard. Will definately make it again.

    Good flavours and the cauli retained a nice bite. Used all cheddar, semi skimmed milk and Dijon mustard. Very filling.

    This was delicious and I used the Gruyere which I think gave the cheese sauce a more distinctive flavour than ordinary cheddar Would use a small cauliflower too, rather than half. Great comfort food <3

    Delicious. Something a bit different I served with new baby potatoes roasted. Husband who's not keen in cauliflower cheese loved it. Will definitely make again.
