Method

  1. Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
  2. Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.

    I've been doing these for years and have many variations. Try paprika for seasoning, or chili if you like it hot. I make mine chunky as too lazy to cut so precisely and also don't bother par boiling although I admit they're better parboiled. Just don't like the extra washing up.

    I can't get groundnut oil where I live. Why is groundnut suggested and can it be substituted with another more easily found oil?

    Loved this recipe! I have made my own oven chips before but never blanched them first and these were so much better. My partner who is hard to please raved about them, definitely making them again.

    These are beatiful , they are seasoned perfectly so yu get that nice salty peppery taste aswell as that crunch which you should always get in oven chips.So a thumbs up to this recipe.Defenatley using this again.

    Great recipe! Perfectly cooked inside and out. A brilliant and easy alternative to frozen chips. I put them on the top shelf to make sure they came out crispy...

    My mum wasn't impressed. Said I didn't make anywhere near enough! ;) I find rooster potatoes by far the best for these wedges. When blanching I add powdered onion, makes them taste even better. Also once drizzled try adding 'season-all' which has garlic, onion, chilli and other flavours, absolutely delicious! Great with garlic mayo BTW. ;)

    I personally think that describing these chips as "healthy" is VERY NAUGHTY, given that there is not a specific volume given for the groundnut oil, and one person's idea of a drizzle is very different from another's! ....No wonder they haven't given nutritional information about this recipe! Fail!

    I make these a lot. Instead of the groundnut oil, try olive oil instead and add some chopped fresh rosemary. Mmmm...good!
