Pea & pesto soup with fish finger croûtons

Method

  1. Tip the peas and potatoes into a large saucepan, then pour in the stock. Bring to the boil and simmer for 10 mins, until the potato chunks are tender. Meanwhile, grill the fish fingers as per pack instructions until cooked through and golden. Cut into bitesize cubes and keep warm.
  2. Take a third of the peas and potatoes out of the pan with a slotted spoon and set aside. Blend the rest of the soup until smooth, then stir in the pesto with the reserved vegetables. Heat through and serve in warm bowls with the fish finger croûtons on top.

    Very simple, quick and tasty, popular with my family including children. I always start with an onion, fry it very gently until just soft, before I add the other ingredients. Yummy!

    This is one of my favourites! The pesto really compliments the peas and my little one loves the idea of slimey green witches brew soup with fishy dippers!

    this is the first ever recipe I tried from the magazine, its gorgeous, with or without the fish fingers. It works just as well with red pesto (but doesn't look quite so nice!)

    The nutritional serving is fo rper serving ... but it doesn't mention anywhere on the page how many servings it provides! (Apologies if I have indeed missed it somewhere!).     Very very good - fish finger croutons are amazing and work really well. You may need a touch more water though, it is a little thick (not thick enough to eat with a fork though).

    Surprisingly, this was very, very tasty and I was so pleased with how it had turned out. Will definitely be making again. I didn't do the fishfinger croutons part...but will try this next time. We ate ours with some homemade bread and it went down really well with my six year old...but he wants it with fishfingers next time!

    I made this for lunch today and agree with everyone that it is incredibly tasty. I think next time I make it I will add more stock as it was a bit thick and now it is cold, it looks a bit like baby food!

    Delicious! I made this last night, when I saw the recipe I wasn't sure but decided to give it a go as the comments where so good. It was really lovely warming comfort food. The fish fingers are a must as they add a little something extra.

    Loved this soup, a meal in a bowl. Very quick and easy. Made the mistake of adding a bag of sugar snap peas I had to use up which made the end result rather stringy, will stick to podded peas next time.
