Pasta with garlicky greens

This comforting vegetarian recipe is the perfect dish to warm yourself up on a cold winter night

Method

  1. Heat the oil in a frying pan. Add the leeks and garlic and let them soften for 15 mins. Stir in the spinach or kale for final few mins to wilt. Add the crème fraîche, stir and remove from the heat.
  2. Cook the pasta in plenty of boiling water. Drain the pasta, put it back in its saucepan, then stir the leek sauce into it. Serve in bowls with crumbled blue cheese on top.

    My husband had leeks and cabbage as his main meal and said it was v tasty! Nauseated/weak/dispirited due to renal failure/hospitalised one month - so max 1litre/day and saltfree: Used far more garlic/less pasta/added fresh basil/lots of whole cumin and at end separated his and mine into the 2 dishes that I was already using; added grated cheese to mine; small amount of chopped orange pepper, paprika and crushed chilies to his.

    This is ridiculously easy, but also pretty tasty. I also use more garlic than it says, but that's about the only alteration. It's also really easy to scale up - I've cooked this for 16 people using two camping stoves, and it went down a storm.
