Chicken with mushrooms

A healthy and low calorie chicken casserole with bacon, peas and a parsley sauce - use chicken thighs for extra flavour and juiciness

Method

  1. Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.
  2. Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

    Made this last night.... Wonderful. Used cider instead of white wine vinegar and chicken breast... Will make this a regular meal... Very easy to do.

    I made this tonight it was quite tasty, I added some creme fraiche too, don't think it would have been as good without it. The thighs I thought were a bit tough thou so think I will make it with chicken breast pieces next time.

    Lovely and filling! I serve this with mini jacket potatoes - new potatoes baked in skins in a really hot oven. Would work well with mash too. Great little winter comforter with low fat.

    Lovely! I added a slosh of white wine and also added green beans that needed using up. I also had smoked streaky bacon that needed using up, so used that instead of the pancetta. Not sure if you should simmer covered or uncovered, I put a lid on and then removed it once I added the veg and parsley to thicken the sauce up. Served with mash - yum!

    Little bit greasy & sauce not quite think enough. Next time I will use some skinned breasts instead & a little more flour to thicken the sauce. Very tasty though.

    really enjoyed this ,doubled up the quantaties so i can freeze it for when im in a rush, had a few crushed chillies to the flour but it didnt taste in heat at all

    Made this the day before to be taken into work as a hot lunch option. Served it with pasta. The taste was great. During the cooking, it did need extra liquid. I simmered it - covered - but yet it still needed more than stated. I just added a slosh of white wine and a touch of hot water. Very nice! Will do it again.
