Ingredients

  • 2 tbsp olive oil
  • 500g boneless, skinless chicken thighs
  • flour, for dusting
  • 50g cubetti di pancetta
  • 300g small button mushrooms
  • 2 large shallots, chopped
  • 250ml chicken stock
  • 1 tbsp white wine vinegar
  • 50g frozen peas
  • small handful parsley, finely chopped

Method

  1. Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.
  2. Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

Once again GF doesn't let me down. Delicious recipe. Forgot to add peas but had it with leeks and potatoes.

Made this evening.. It was ok. It definitely needs a spoon or 2 of creme fraiche stirred in at the end. I served with mash, would probably serve with pasta next time. I added 2 cloves of garlic and it probably still needed more.
It was nice but I won't be in a rush to make it again to be honest.

Everyone in the family cleared their plates and wanted more (there wasn't any). Even my very fussy daughter proclaimed it to be "quite nice" (a higher accolade than you might think, considering the source). This will become a regular meal in our house.

I've cooked this dish twice now, just added a little more stock and peas but it has become another firm favourite. Very nice.

yummy - I used what I had in so adapted slightly with chicken thighs with bones in, red onion instead of shallotts, chestnut mushrooms chopped, garlic cloves, bacon instead of pancetta and no peas. Served with cubed potatoes. Delish!

Absolutely superb, only thing I did different was add a couple of cloves of garlic with the onions, which were small shallots halved. Best chicken recipe we have tried for ages.

This is really delicious. I used 2 x red onions instead of shallots, and chopped up smoked bacon instead of pancetta. Tasty and easy to make.

This was amazing! :) it was very delicious and tasteful :) Did everything as the recipe except pancetta as I did not have. Will include them though next time.

This is a new mid-week favourite. Husband enjoyed it and will definitely do it again.

love this recipe, i swapped the peas for sweetcorn and added fresh garlic and served with mashed potato :) lovely mid week tea :)

Delicious and very easy. I added a splash of white wine and a tablespoon of creme fraiche, as I had them the cupboard, didn't have any parsley so used dried rosemary. Served with pasta but I think it would work well with rice or potatoes. Will definitely make it again.
