Chicken with mushrooms

A healthy and low calorie chicken casserole with bacon, peas and a parsley sauce - use chicken thighs for extra flavour and juiciness

Method

  1. Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.
  2. Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

    Love this simple yet very tasty recipe. No skinless boneless thighs at Tescos both times I've made it, so used the skin on, bone in thighs and just uppped the cooking time by about 30mins so the chicken was so tender it fell off the bone. I also added a pinch of chilli flakes and secret ingredient - splash of apple juice, to increase the richness of flavour. A splash of white wine would probably work well too. I also substituted the shallot for half an onion on the 2nd occasion, and used chopped back bacon instead of pancetta as it was just what I had. Other half also loved it so this one will be on the regular menu now.

    I've made this twice now and both times it was fabulous. I've made it both with pancetta and back bacon, equally gorgeous! If you're on slimming world, use lean back bacon and fry light and I'm sure it would be syn free!

    Made this with skin-on, bone-in chicken thighs and upped the cooking time as Maria stated earlier. It was absolutely divine, would be very happy to get this in a restaurant. Definitely will do again.

    this is really good. Made this for my kids using chicken breasts and bacon, as that's all I had and used white wine instead of vinegar. Also added a tbs of half fat creme fraiche at the end for the sauce. They declared it delicious. Then made it for my husband and I using pancetta and more stock to make it more saucy + the creme fraiche. Fab. Will definitely make again.

    Very easy to make. Also enough taste but I think I will try it next time with a tbs of creme fraiche, or serve with rice. Will make again though.

    As I didn't have shallots, I substituted with a small brown onion and 4 spring onions. Served with mafalda corta pasta, it was a really tasty and easy meal.

    Really very good. Couldn't get thighs so used chicken breast cut into large pieces. The sauce could have done with being slightly thicker but it went down well in our house.
