Method

  1. Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
  2. Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
  3. Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.

    Nice recipe, although I had to change the quantise as I only had three eggs. I used a small oblong tin and cooked the cake for 25 mins. Really nice served warm with cream.

    Very easy to make. Used a bit more spices than stated as I like it flavoursome. Lovely and moist and tasted very festive. Will def make again.

    Doesn't work for me. Don't taste a lot of chocolate or spices. Nice texture. Perhaps omit the cocoa and make it a vanilla-apple cake.

    It is really nice, although I did not have the mixed spices but It still came out nice but would definitely add the mixed spices next time to give him more flavor

    Bella - Looking at the back of my jar of mixed spice, it contains cinnamon, coriander, nutmeg, clove, pimento, ginger. You couldn't go wrong with any of the above, but go easy on the clove and pimento.

    This cake was absolutely gorgeous, it had a great moist texture and it rose very well. I would also recommend using more mixed spices, and I don't think you need as many apples as they suggest; otherwise, a lovely recipe.
