Chipolata & spring onion frittata

Method

  1. Heat oil in a 20cm non-stick frying pan. Add chipolatas and cook for 7-8 mins until browned. Meanwhile, crack eggs into a large bowl and beat well together. Stir in the bread, spring onions and garlic, then lightly season.
  2. Heat the grill to medium. Pour the egg mixture into the hot pan, then cook on the lowest heat for 6-7 mins, until the egg is almost completely set. Place the pan under the grill for 2-3 mins until golden brown and cooked through. Slide onto a chopping board and cut into wedges.

    This was so yummy i nearly made another one straight after, i added a few things to spice it up a bit.. like a sprinkle of dried chilli flakes, and red pepper finely diced... So good ! will definitely make again ! And this recipe is so easy to change to add or take away things... i tried the same but substituting the sausages for bacon and leeks... equally as tasty !

    I love this recipe! Have made it again and again, often substituting red onions instead of spring as I always have some in the cupboard. I also like to add a bit of dried chilli, works really well!

    Hubby and i thought that this was really nice......will definitely be making it again,my 6 year old daughter also liked it apart from the spring onions!Lol!Had to pick them out of hers!Typical!Lol!

    Yummy and easy. Definitely one of those dishes where you could bung in whatever you've got lying around or add spices to pep it up. A midweek winner.
