Vintage chocolate chip cookies

A retro recipe for chocolate-studded biscuits with a soft squidgy middle - make plenty as they're guaranteed to be a hit!

Method

  1. Preheat the oven to 190C/170C fan/gas 5. Line two baking trays with non-stick baking paper.
  2. Put the butter and sugars into a bowl and beat until creamy. Beat in the vanilla extract and egg. Sieve the flour, bicarbonate of soda and salt over the mixture and mix in with a wooden spoon. Add the chocolate chips and stir well.
  3. Using a teaspoon, place small mounds of the mixture well apart on the baking trays. Bake in the oven for 8-10 mins until light brown on the edges and still slightly soft in the centre.
  4. Leave on the tray for a couple of minutes to firm up and then transfer to a cooling rack.

STORING DOUGH

You can keep the uncooked dough in a sealed container in the fridge for up to two weeks. Simply take some out, dollop on a lined baking tray and allow to come up to room temperature for 5 mins before baking.

FREEZING THE BISCUITS

If you've frozen the biscuits, take them out and arrange them on a lined baking sheet. Once defrosted, pop them in a medium oven 190C/ 170 fan/ gas mark 5 and heat for 2 - 3 mins to crisp up. Don't leave them too long or they'll dry out.

    Just baked these, glad I did, lovely thick cookies with a chewy centre and crisp outer shell. I used soft dark brown sugar, yummy!

    Brilliant recipe! If you want perfect cookies in 30 minutes, this is the recipe. It's so much easier than my other recipes (I'll probably have everything in already too) and yet the cookies are nicer!

    Just delicious. I had mine in the oven for nearer 15 minutes and were still fantastically gooey and moist. Definitely a recipe for the binder.

    They were quick, easy and very nice. Better than the 'Triple Chocolate Cookies' on here, I added some orange zest which really finished off the cookies well. Will definitely make again!

    Delicious! So easy to make and perfect for little helpers. Amount baked differed slightly from that in recipe as we had to taste test the cookie dough lots before we baked. Very handy to have in the fridge. Will be doing on a regular basis.

    These are the best biscuits I've ever made. I didn't have granulated sugar so I made up the whole sugar amount with light muscovado and it gave them such a lovely caramel flavour. Stirred some chopped coconut chocolate into the dough at the end and they were amazing. Might try making the dough chocolatey with some Green & Blacks cocoa powder next time.
