Roasted fish Italian style

Jazz up white fish, Italian-style

Method

  1. Preheat the oven to fan 180C/ conventional 200C/gas 6. Take the fish fillets with the skin on, and season with salt and pepper. Heat the olive oil in a large pan and cook the fillets skin side down for 2-3 minutes until just crisp. Transfer to a large roasting tin, skin side down.
  2. Cut the cherry tomatoes in half and scatter around the fillets. Cut the olives in half and scatter over the tomatoes, followed by the pine nuts. Season.
  3. Put the tray in the oven and bake for 12-15 minutes, until the fish is tender. Remove from the oven and scatter the tomatoes with a the basil leaves. Spoon onto four warm plates and top each with fish. Drizzle with a little extra virgin olive oil.

    So quick and easy not to mention tasty for such few ingredients. Used skinless cod to cut down on cooking process, ready within 15 mins. Not keen on olives so removed and used lemon juice, mixed herbs on bed of puy lentils.

    I see most people loved this so I'm guessing it must have been the fish I used, but this came out awful. We couldn't finish it and will be binning the leftovers. I'm working with fish available in Australia and went with Nile Perch which was my downfall. The fish wasn't firm at all and tasted way too 'fishy' which didn't work with the Mediterranean flavours at all. I imagined this would be lovely, so I might give it a tentative go another time with different fish, but this attempt has left a really bad taste in my mouth.

    Made this for a dinner party, and It was loved by all...even got asked for the recipe..nice and light meal..served with new potatoes and broccoli...

    This was okay but I found it a little tasteless, I think it would be fairly low in calories and quite healthy, it was simple to make and it didn't involve a lot of ingredients - might make it again and add something to it.
