Method

  1. Preheat the oven to fan 100C/ conventional 110C/gas 1⁄4. Line 2 baking sheets with Bake-O-Glide non-stick liner or parchment paper (meringue can stick on greaseproof paper and foil).
  2. Tip the 4 large egg whites into a large clean mixing bowl (not plastic). Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
  3. Now turn the speed up and start to add 115g caster sugar, a dessertspoonful at a time. Continue beating for 3-4 seconds between each addition. It's important to add the sugar slowly at this stage as it helps prevent the meringue from weeping later. However, don't over-beat. When ready, the mixture should be thick and glossy.
  4. Sift one third of the 115g icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula. Continue to sift and fold in the remaining icing sugar a third at a time. Again, don't over-mix. The mixture should now look smooth and billowy, almost like a snow drift.
  5. Scoop up a heaped dessertspoonful of the mixture. Using another dessertspoon, ease it on to the baking sheet to make an oval shape (pic 3). Or just drop them in rough rounds, if you prefer. Bake for 1 1⁄2-1 3⁄4 hours in a fan oven, 1 1⁄4 hours in a conventional or gas oven, until the meringues sound crisp when tapped underneath and are a pale coffee colour. Leave to cool on the trays or a cooling rack. (The meringues will now keep in an airtight tin for up to 2 weeks, or frozen for a month.) Serve two meringues sandwiched together with a generous dollop of softly whipped double cream.

    Finally a fantastic recipe for meringue which worked beautifully. Crisp on the outside and chewy on the inside. Worked well with brown bread ice cream ( the custard base for which generated the egg white) and raspberries.

    does what it says on the tin, even if you use a casserole dish because it was left in the flat i moved into and i am a skint student who can't afford a baking try (i will have money some day, maybe)

    The recipe and method were fine but how do cook a meringue that remains nice and white instead of acheiving a coffee coloured base;I did adhere to the cooking time and emperature.

    Dee, I would suggest leaving out the icing sugar as it may be this that is causing the coffee colour through caramalisation.

    These were great, chewy on the inside and crisp on the outside. I did however do it wrong on my first atempt, as there was the tiniest bit of egg yolk in the whites and it stopped them forming stiff peaks. Ooops.

    Lovely recipe - better than Delia's which is the one I usually use. I thought they were a little bit too gooey in the middle, but everyone else that had one thought I was talking nonsense when I said that and they thought they were just right!

    In regard to white meringues I remember my mother making white ones and she never used caster sugar only icing sugar. I believe she kept the temperature even lower and cooked them for longer so they would more or less dry out rather than caramelise.

    Well what can I say!!! I have been attempting meringues for years & god only knows why but every one has ended up in the bin. I have followed many a recipe and many would say its a piece of pie, well not for this lemon meringue pie lover, I am the laughing stock of the family I once entered a cookery competition back in my school days & won with a hazel meringue gateaux, what I didnt tell anyone one was it was my lovley mum who baked it lol! mine like the rest of them went into the bin!! This recipe is a big success & I think my mistake in the past as been not enough sugar, you see this can not be a low calorie low carb recipe unfortunately & this is what I have been trying to do so thank you Good Food for your help I am a happy lemon meringue pie lover again!!!!

    Never made meringues before and so was a bit nervous but they seem to have come out really well (only eaten one so far though husband has already managed to scoff two is circling for his third).
