Oriental salmon & broccoli traybake

Five ingredients is all you need to create this Asian flavoured fish dish with healthy greens and fresh lemon

Method

  1. Heat oven to 180C/160C fan/gas 4. Put the salmon in a large roasting tin, leaving space between each fillet.
  2. Wash and drain the broccoli and, while still a little wet, arrange in the tray around the fillets. Pour the lemon juice over everything, then add the lemon quarters.
  3. Top with half the spring onions, drizzle with a little olive oil and put in the oven for 14 mins. Remove from the oven, sprinkle everything with the soy, then return to the oven for 4 mins more until the salmon is cooked through. Sprinkle with the remaining spring onions just before serving.

    This was great, really easy and quite unusual. Make sure your broccoli is still quite wet though as mine went rather brown!

    Loved this recipe as the salmon was cooked beautifully. I did, however, remove the broccoli part way through and steamed it instead as it really wasn't cooking properly and was going rather brown. I also added cherry tomatoes and baby courgettes. A proper winner with the whole family!

    This will never work by cooking the broccoli with the salmon as the broccoli needs more moisture to cook properly so I steamed the broccoli separately. Also, the salmon took about 15 mins longer than the recipe states. Also served with peas and minted new potatoes.

    I agree that the broccoli should be cooked seperately. As should the green onions for that matter. Mine got very very brown. The salmon tasted quite good but there are other salmon recipes which are better.

    Very tasty and quick for a mid week supper. I have found that it's best to par boil the broccoli for about three minutes first though or it doesn't cook well.

    Delicious. I made a few changes: I parboiled the broccoli as per recommendations here; I chopped a chilli and stirred it into the olive oil before drizzling it over; and I left out the lemon (accidentally!). I'd say the cooking time wants to come down a little bit - maybe by around 2-4 mins - as the salmon was rather overcooked. it tasted fantastic though, and was very filling. Thank you!

    Great flavours, but ended up microwaving the broccoli because, despite being new season tenderstem, it was rock hard. I did also put some asparagus in and that cooked beautifully alongside the salmon. So next time I'll stick with asparagus in season and/or parboil the broccoli.
