Method

  1. Make several diagonal slashes across each chicken breast. Tip the other ingredients into a wide shallow bowl and swirl them together until everything is well mixed. Add the chicken breasts and turn them in the mixture until they are evenly coated. At this point you can cover the dish with cling film and chill the chicken for 24 hours, but it’s also fine to cook them straight away.
  2. Preheat the grill or light the BBQ. Then cook the chicken for 5-6 minutes each side, turning once and brushing or spooning over more marinade as you go, until the chicken is browned and glossy. Serve the chicken on a bed of dressed salad leaves.

A nice, light supper, especially in the summertime. I've made this a few times and it's so easy but delicious.

This dish is simple to make and the result was delicious. I just served it with some savory rice. Comment from husband was when are we having that again - praise indeed.

I used the marinade on pork ribs and it was gorgeous! I will definitely use it again and again.

INCREDIBLE! I did this with sweet potato wedges and left the chicken marinating for 24 hours. It was well worth it as the chicken was so juicy. I did have to cook it for a bit longer than the recipe suggested but I will be cooking this for years to come.

Tasty recipe, takes no time at all which makes a good weekday evening meal.

This was an amazing recipe. I added a teaspoon of marmalade
right at the end which made it really syrupy. Served with boiled potatoes and wilted spinach. Quick and delicious.

I've used this recipe with variations so many times. It's superb in the original form but gives plenty of scope to use your imagination. A brilliant store cupboard classic.
