Chicken soba noodles

Method

  1. Cook the noodles, drain well, then toss with a drizzle sesame oil.
  2. Finely slice the mangetout, cut the carrot into matchsticks and deseed and slice the red chilli.
  3. Add to the noodles with the toasted sesame seeds and some shredded cooked chicken, if you have it. Pack with a small portion of soy sauce.

Avocado & orange salad

Slice ½ avocado into a plastic container with segments from ½ orange, handful rocket leaves and a handful chickpeas. Add a squeeze orange juice, splash olive oil and a splash red or white wine vinegar. Pop on the lid and shake to mix.

Carrot & seed sarnie

Grate 1 carrot and mix with 1 tsp sunflower seeds, 1 tbsp raisins, a very small handful beansprouts and 1 tbsp of your favourite light fruity dressing (we used Sainsbury's Mango & chilli dressing). Spoon into a wholemeal roll or between 2 slices wholemeal bread.

    with shredded chicken this is delicious. Make it wheat free with rice noodles and wheat free soya sauce.

    Made this for lunch the night before (including soy mixed in - shock horror) and was still really tasty when it came to eating it, although the carrots were a little floppy! I also added a squeeze of lime juice for a bit more zing and some fresh coriander.

    This is a really great dish, very healthy and incredibly tasty! I added a sliced green pepper as well! The portion sizes are quite large! Yum!

    Yummy! I made with egg noodles, mangetout, sugarsnap peas and spring onions. I used turkey and added a drizzle of sweet chilli sauce with the soy. Delicious, healthy lunch!
