Ingredients

  • 200g plain corn tortilla chips
  • 2 cooked chicken breasts, shredded into small pieces
  • 6 spring onions, thinly sliced

  • 140g Red Leicester cheese, grated
  • 1 small jar red or green sliced pickled jalapeño peppers

  • small bunch coriander, leaves roughly chopped
  • your choice of salsa, hot pepper sauce (like Chipolte Tabasco), crème fraîche, guacamole or extra jalapeños, to serve

Method

  1. Heat oven to 200C/180C fan/gas 6. Layer up the tortilla chips in an ovenproof dish or baking tray with the chopped chicken, spring onions, cheese and pickled jalapeños. Bake for 8 mins or until the cheese is melted.

  2. To serve, sprinkle with the coriander and eat with your favourite accompaniments.

hubby made these the other night for supper - absolutely delicious - cooked in the right time - we couldnt get jalapenos in our local tesco so got a jar of mixed hot and spicy peppers and boy , were they hot !!! will def be making these again so 5 * for this one

Fab for a quick tea, however, I like using different cheeses, like grated mature cheddar.

Made this after a hard gym session, it's so easy to throw together when you're tired, but it tastes great! I served mine with a side of corn on the cob, and will make again one day :)

I have made these nachos twice now and everyone loved them. It's so easy and really tasty. So the chicken wasn't entirely plain whilst cooking it I sprinkled on a little paprika. Topping the nachos with with salsa and sour cream really tops the nachos off well. Definitely will be making these again.

The cooking time was far to long. Try 40minutes. Ten minutes before end of cooking, I sprinkled a thin extra level of cheese. Also I put in pitted black olives, and used red pepper instead of the recipe suggestion. Made for a football viewing T.V supper. Easy and tasty. My husband loved it!

So simple & quick and very tasty. My parents don't like spicy food ("it doesn't agree with me") so used a jar of Karyatis roasted red peppers instead of the jalapeños.

Well nice! Used a jar of salsa dip that needed useing and some cherry tomatoes on top for decaration
