Homemade chicken nachos

A super-quick Mexican snack to enjoy with a Margarita or three

Method

  1. Heat oven to 200C/180C fan/gas 6. Layer up the tortilla chips in an ovenproof dish or baking tray with the chopped chicken, spring onions, cheese and pickled jalapeños. Bake for 8 mins or until the cheese is melted.
  2. To serve, sprinkle with the coriander and eat with your favourite accompaniments.

    So simple & quick and very tasty. My parents don't like spicy food ("it doesn't agree with me") so used a jar of Karyatis roasted red peppers instead of the jalapeños.

    The cooking time was far to long. Try 40minutes. Ten minutes before end of cooking, I sprinkled a thin extra level of cheese. Also I put in pitted black olives, and used red pepper instead of the recipe suggestion. Made for a football viewing T.V supper. Easy and tasty. My husband loved it!

    I have made these nachos twice now and everyone loved them. It's so easy and really tasty. So the chicken wasn't entirely plain whilst cooking it I sprinkled on a little paprika. Topping the nachos with with salsa and sour cream really tops the nachos off well. Definitely will be making these again.
