Courgette & halloumi skewers

Marinade cheese with mint, lemon and olive oil, thread onto kebab skewers with veg and chargrill

Method

  1. Mix the chilli, half the mint, lemon zest and juice, oil, courgettes and halloumi. Leave to marinate for 30 mins. Soak 8 wooden skewers for 20 mins.
  2. Thread the courgettes and halloumi onto the skewers. Cook on the BBQ, or under a grill, for 7-8 mins, turning halfway through and basting with the remaining marinade. Scatter over remaining mint.

    We made these for a family BBQ. They were quite tasty but most of the cheese crumbled and broke when we tried to put it on the skewer. We cut the cheese according to the picture - maybe thicker cubes would help! Don't think we would make again too fiddly!

    You do have to handle the cheese carefully to avoid it splitting, but this was a very quick and fresh tasting recipe. I grilled, then served the skewers over couscous dressed with lemon and garlic for a simple midweek meal. I'm planning to try them on the BBQ tonight.
