  1. Heat oven to 200C/180C fan/gas 6. Place the apples, sugar, mixed spice and sultanas in a saucepan with 2 tbsp water and cook, covered, for 6 mins or until the apples are soft, stirring once or twice. Tip into a shallow dish and spread out to cool slightly.
  2. Cut the sheets of filo in thirds lengthways, then brush lightly with the melted spread. Place a spoonful of the apple filling at the top of each strip, then fold over and over to form triangular parcels. Place on a baking sheet and bake for 15-20 mins until crisp and golden. Serve with low-fat yogurt, if you like.

I think I will try without raisins and add almonds or nuts instead, and cinnamon. Last Christmasi did these with mincemeat and that was fab.

wendybull. There is an excellent diagram instruction for making triangles in the Fontana book "Greek Food" by Rena Salaman, page175. I make them in every possible size, from a tiny single bite to a large lunch-sized knife and fork job, just by varying the width of the strip and the size of the filling dollop . I've often done it for a Classics Fair feast with a class of nine-year-olds, and they soon get the hang of it, producing trays of goodies. It is a lovely way to occupy kids for an afternoon. And you can experiment with all sorts of fillings, sweet and savoury.

Funny, did you know that the sugar and filo pastry are the most 'fattening' things in this recipe. Refined sugar and flour are assimilated in the body and excess is turned into body fat. There really is no other use. Whereas Butter contains fat soluble vitamin A, C, E and K. So healthy and extremely tasty. A better version of this would be using rapadura sugar (nutrients in tacked) and sprouted flour (whole wheat) pastry. For more info visit: www.thenourishingroad.co.uk

these taste incredible. I found that it was easier and nicer to make them into bigger rectangles, making four from one roll of pastry.i also ended up using puff pastry which made them much doughier but with a crisp bottom. They are perfect with a ball of vanilla ice-cream and evryone in the aily lovess them! i did find that there was to much sugar so i use half the amount and occasionally even less. ENJOY!

Delicious!! Really easy to make and looked great. Brushed some of the leftover melted butter on them when they were made and sprinkled a little sugar on top. Perfect!

I did these once and they were really good ... what I would like to know is, is it 196 calories per samosa or 196 calories per serving i.e. 4 samosas?

Definitely the calories are per samosa-the sugar in the ingredients list is 200kcals alone :-) Making these this afternoon, so fingers crossed they turn out well!
