Spiced glazed pineapple with cinnamon fromage frais

Method

  1. Mix the lime juice and half the lime zest with 1 tbsp honey, a pinch of cinnamon and nutmeg. Set this sauce aside. Stir the icing sugar and a pinch of cinnamon into the fromage frais.
  2. Heat the butter and remaining honey in a non-stick frying pan until melted. Add the pineapple and cook over a high heat for 8 mins, turning regularly until caramelised. Pour in the spiced lime sauce and bubble for a few secs, tossing the pineapple to glaze in the sauce.
  3. Serve immediately, sprinkled with the remaining lime zest and accompanied by a dollop of the cinnamon fromage frais

    Added rum to the lime and then let it cook on the bbq after we had taken the main course off. Drizzled extra rum over before serving. Absolutely gorgeous. Staple bbq dessert now!

    Delicious. As I could not get any fromage frais, I substituted with Mascarpone (ok - high in calories!) and whipped some ginger marmelade into it. Finely chopped some sugared ginger and added that too. Make ahead and easy!

    I have now made this 3 times when we have had friends for lunch and each time it has gone down really well and I've been asked for the recipe. First time I'd forgotten to buy some fromage frais and we all agreed it didn't really need it so didn't bother to get any next twice and still of same opinion. Interestingly first time when I cut into it I was a bit worried that the pineapple was too ripe but in fact it worked best with that one as there was the lovely contrast between the sweet fruit and the slightly sharp sauce. I still can't quite believe that anything so quick and easy to prepare can taste so good and be so low in calories. This has got to be my best find on the site so far!

    So yummy! I substituted the yoghurt for vanilla ice cream and drizzled the leftover caramelised honey over. Really satisfied my sweet tooth!

    This is fantastic! It tastes really special and you don't feel at all like you're eating a virtuous, healthy pud. I cut my pineapple into chunks and served it on a platter as part of a dessert buffet, which worked well.

    Deceptively easy to make - my parents thought I slaved away! My dad, who is practically allergic to healthy foods, really enjoyed this. In my eyes, this is the best recipe ever. Low in fat and calories, woo hoo!
