Salmon with warm chickpea, pepper & spinach salad

This wholesome grilled salmon dish is ready in just 20 minutes but makes a smart meal for two

Method

  1. Heat the grill. Squash the pepper quarters flat and grill for 5 mins or until well blackened. Leave the grill on, then transfer the peppers to a bowl, cover with cling film and leave to cool slightly before peeling off the skins and cutting the flesh into strips.
  2. Make the dressing by whisking together the lemon zest, juice, smoked paprika, olive oil and seasoning. Toss half the dressing with the spinach leaves and divide between 2 bowls.
  3. Season the salmon and grill for 5 mins or until just cooked through. Meanwhile, heat the chickpeas in their canning liquid in a saucepan for 3-4 mins. Drain well, then mix with the remaining dressing and strips of pepper. Spoon over the spinach and top with the salmon to serve.

    Very tasty with a simple refreshing flavour. I had a baked potato on the side but unless your very hungry that's probably a bit excessive - half a tin of chickpeas was quite filling alongside the salmon.

    I've made this several times now since it first appeared in the magazine. It has become a firm favorite in our household especially at times like now when you're looking for fresh flavours after all the christmas stuff. Simple to make, satisfying and refreshing!

    I added more lemon also, but this is depending on your taste. also refrained from peeling the pepper skins, as I prefer the scorched grilled skin flavour! great recipe.

    This is amazing and incredibly healthy (omega 3, iron, vitamins, protein and fibre ahoy!) Makes a very generous amount of salad, loved the dressing, will make a little extra next time. Salmon beautifully done under the grill. A meal of happiness.
