Bacon & mushroom pasta

A simple one-pan pasta dish with bacon, mushrooms and pesto - ready in under 30 minutes

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

MAKE IT DIFFERENT

Swap the basil pesto for red or sun-dried tomato pesto.

MAKE IT DAIRY-FREE

Omit the crème fraîche, replacing it with a few more spoonfuls of pesto instead.

    This was a lovely, filling dish which was quite easy to make. However, I don't see how it is a one-pot dish, as it requires one saucepan to cook the pasta, and another to fry the mushrooms and bacon. Also the amount of pasta it says to use is far too against the other ingredients-I did about 300g and next time I make it I may even use less than that. Nevertheless, it was still a delicious dish in the end and we were left with spotless plates!

    lLoved it,loved it!!! Hubby says it tastes better than restaurant pasta and trust me he's a bit of a pasta snob.I used tomato pesto and left out the double cream(didn't have any in the fridge) but it still tasted amazing and its so quick that I made it while my 6-month old took a catnap.Have repeated this for friends since then and got full marks everytime.

  • 200ml carton 50% fat crème fraîche
  • handful basil leaves
