Bacon & mushroom pasta

A simple one-pan pasta dish with bacon, mushrooms and pesto - ready in under 30 minutes

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

MAKE IT DIFFERENT

Swap the basil pesto for red or sun-dried tomato pesto.

MAKE IT DAIRY-FREE

Omit the crème fraîche, replacing it with a few more spoonfuls of pesto instead.

    Mine looked a lot creamier than the dish pictured so perhaps i used a bit too much creme fraiche but it was very tasty nonetheless & so quick! Will definitely make it again.

    We really liked this, but it is a bit simple. It is really quick and easy to make and my hubby loved it the next day for left overs, but not really the type of thing you need a recipe for

    An excellent example of how a simple recipe results in a wonderful meal! Instead of chestnut mushrooms I used portobello mushrooms because of their incredible flavour, a variation I can heartily recommend!

    Mxed revues from the family with this one. Main one is needs a lot less pasta and more bacon. I used low fat pesto which may have been a mistake. I liked it but the blokes in the family not sure.

    Loved this pasta dish, So easy and quick. This has become a regular meal in our house and is a hit with everyone! This the best pasta recipie I have ever tasted. Definitely one to try if you already haven't!!

    This was a lovely recipe, really quick to make and very tasty! I used garlic & herb cream cheese instead of the creme fraiche and it tasted great! Had some left over so took it work and had it cold for lunch. Made a nice change to the usual sandwich. Will definitely make this again :-)

    Lovely recipie. Made it low fat by using weight watchers creme fraiche (From Tesco) and Tesco healthy living smoked bacon rashers. So this cut out a lot of the fat content. To bulk it up i added chicken as well. For extra flavour i crushed up gralic cloves and put it into the creme fraich. My partner loved this! Make sure you use the basil as well.

    Great pasta midweeker again from GF! Used the village butchers dry cured smoked bacon, best I've ever tasted, and the two times I've made this I used red pesto, Roast Pepper the first time and Aubergine the second. Very good on both occasions very quick and super tasty.

    Awesome dish. cooked it for the whole family and even the fussy eaters ate it all. has become a weekly regular as the leftovers (if there are any) are great for lunch the following day. quick, easy and cooked in one dish; saved on washing up.

    Very tasty meal. I added a clove of garlic and an onion which worked. Craime fraiche gave it quite a sharp flavour - nice, but i may try single cream next time.

    Excellent - something the whole family likes (a miracle!) Easy and quick to cook - I've been told to serve it with ciabatta, so next time will probably increase quantities of pesto and creme fraiche.

  • 250g pack chestnut or button mushrooms , wiped clean
  • 8 rashers streaky bacon
  • 4 tbsp pesto (fresh from the chiller cabinet if possible)
  • 200ml carton 50% fat crème fraîche
  • handful basil leaves
