Bacon & mushroom pasta

A simple one-pan pasta dish with bacon, mushrooms and pesto - ready in under 30 minutes

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.
  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.
  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

MAKE IT DIFFERENT

Swap the basil pesto for red or sun-dried tomato pesto.

MAKE IT DAIRY-FREE

Omit the crème fraîche, replacing it with a few more spoonfuls of pesto instead.

    Wow you must try this... I have had people I don't know ask for the recipe after my teenagers and friends had this for dinner (and they are hard to please). Really easy and so tasty.

    Another one of my favourites, I think it;'s great not to use a jar sauce for pasta all of the time. I have added chicken to it aswell and used less pasta to make it even healthier.

    I've used broccoli florets instead of mushrooms and smoked salmon instead of bacon (don't eat it) and left out the pine nuts, and it's been really easy to make and supertasty!

    I've been doing this for years only without the creme fraiche and it is has always been a favorite. I'll have to try this version now to compare - however the picture looks the same as my version so not sure how much the creme fraiche will enhance it. I'll give it a go!

    My hubby wants to send Jane Hornby a big kiss for a fantastic recipe. He reckons this is the nicest pasta dish he's had since for ever - and considering he's 42, that's quite a lot of pasta dishes! LOL Even my son, who hates mushrooms, was able to pick the mushrooms out and ate the rest with every indication of enjoyment (having first established "what the bits of leaf are?". *chuckle* Basil, for those who don't know!). Very definitely a big hit - but we'd probably have some garlic bread with it, next time.

    The recipe is so easy to make and tastes absolutely delicious, every my extremely fussy 4 year old devoured it and asked for more!!! I added a chopped cooked chicken breast and used red pesto instead. I will definitely be making this again!!

  • 250g pack chestnut or button mushrooms , wiped clean
  • 8 rashers streaky bacon
  • 4 tbsp pesto (fresh from the chiller cabinet if possible)
  • 200ml carton 50% fat crème fraîche
  • handful basil leaves
