Creamy ham, leek & mushroom spaghetti

Method

  1. Heat the oil in a large saucepan. Stir in the leeks, 2 tbsp water and some seasoning, cover, then cook for 5 mins over a medium heat until softened. Add the mushrooms and garlic, then cook for 3 mins more. Meanwhile, cook the spaghetti according to pack instructions, then drain, reserving a little of the cooking liquid.
  2. Stir the soft cheese into the leek and mushroom mixture, adding enough of the reserved pasta liquid to give a sauce-like consistency. Add the ham, basil leaves and Parmesan, then toss in the spaghetti.

    Nice dish, if I were to make it again I would substitute with 120 grams of low fat cheese & 50 grams of creme fraishe. Plenty of seasoning required.

    A very nice quick meal. I added a couple of tablespoons of low fat cream and used up some leftover ham sliced as thinly as I could manage. Will definitely make again.

    This is really tasty...i actually made it with thyme not basil and had some left over marscapone in fridge so used that instead of philly...but it was very tasty and definitely making again!

    this was good, quick and easy. I added some chili flakes to add some zing and as earlier comments , definitely needs lots of seasoning. I used creme fraiche and philly cheese that I had in the fridge. easy weekday meal.
