Method

  1. Heat the oil in a large saucepan and fry the peppers for about 5 mins until starting to caramelise. Add the garlic and chillies, cook for 30 secs, then tip in the tomatoes and olives (if using). Season, add a pinch of sugar, bring to the boil, then simmer, uncovered, for 10 mins.
  2. Meanwhile, cook the pasta according to pack instructions. Heat the grill. Drain the pasta and mix into the tomato sauce, along with the tuna. Tip into a large ovenproof dish. Mix the breadcrumbs and Parmesan together and scatter over the top. Grill for 3-4 mins or until the topping is crisp and golden. Serve with a green salad, if you like.

Make it veggie: Spicy pepper pasta gratin

Fry an extra red and yellow pepper as before, and add an extra 1-2 pinches chilli flakes to the sauce. Stir in 1 tbsp drained capers instead of the tuna with the pasta, and top with the breadcrumbs mixed with 2 tbsp grated Parmesan and 1 tbsp pine nuts.

We loved this! I didn't have olives so used some capers I had in the fridge - they worked really well. We had a crunchy green salad with it. Will definitely make this again. A good quick supper for midweek.

Was pleasantly surprised by this recipe, it was really tasty. Picked it for a quick meal as I was short on time and we had all the ingredients in and it turned out really well! Super quick and easy with low calorie and fat content, will definitely make again! Made for 2 but only halved pasta and tomato quantity as I thought it needed all the garlic and tuna and the veg bulked it out. Only had crushed dried chilli so used that and some paprika, also added half an onion and half a veg stock cube for some extra flavour. Worked for us! Will try again with some mushrooms too I think, not true to the recipe I know but think it would work.

A lovely recipe that you can vary according to what you fancy (and what you have in the cupboard!) I like to slice a red onion in with the peppers and be quite generous with the chilli. A crushed packet of crisps sprinkled on top makes a nice alternative to the breadcrumbs.

The first attempt was rather bland, but with some modifications - adding corriander, mushrooms and an onion - it became more flavoursome. A simple dish that is quick to cook.

A delicious recipe that's easily adaptable to what you've got in the cupboard - I added onions and chopped anchovy fillets as I had some that needed using, replaced the wholemeal pasta with white, the chopped tomatoes with passata, and the parmesan with cheddar, and it was still really tasty, and very quick and simple to make.

Easy midweek meal, and tasted better than expected! The topping seemed to add significantly to the simple tuna arrabiata which I often knock out anyway. I added an onion with the peppers, white pasta penne instead of wholemeal (although I suspect wholemeal would be good but I was after speed of cooking!) and a generous dollop of tomato purée. Husband raved about it! A quick win!
