  • 300g tagliatelle


  1. Heat the olive oil in a large frying pan and sizzle the pancetta or bacon for about 5 mins until starting to crisp. Turn up the heat and add the grated courgette to the pan. Cook for 5 mins or until soft and starting to brown then add the garlic and cook for a minute longer. Season and set aside.

  2. Cook the tagliatelle according to the pack instructions and scoop out a cupful of cooking water. Drain the tagliatelle and tip into the frying pan with the bacon and courgette. Over a low heat toss everything together with the crème fraiche and half the Parmesan adding a splash of pasta water too if you need to loosen the sauce. Season to taste and serve twirled into bowls with the remaining Parmesan scattered over.

Absolutely delicious! I used chopped bacon and I made courgette ribbons with a vegetable peeler, rather than grating the courgette. Husband and I thoroughly enjoyed it, I will make this time and time again.

I squeezed the water out of the courgette first added some salt and left to drip in a colander for 20 minutes. I also add a pinch of chilli flakes and some onion. For the vegetarian, Quorn bacon lardons works really well!

I love how this dish isn't too rich (I usually find carbonara style dishes overpoweringly creamy). It's incredibly easy and quick to prepare and tastes delicious. Mid-week supper win!

SO DELICIOUS! 4 courgettes definitely too much, I only used 3 and it was plenty. Was so surprised with how much flavour was in this dish

I haven't tried this recipe yet but I will as I have too many courgettes from the garden BUT I far prefer a weight instead of a number as courgettes can very so much in size.

Used wholewheat fusilli and it was delicious. Also forgot the garlic which didn't seem to matter. Used the grater in food processor so the whole thing took about 3 mins to prep. Easy and yummy. A favourite already! Next will try with no fat creme fraiche to see if it works.

I used Smoked Garlic for a bigger flavour and Pecorino instead of Parmesan. Overall I am really happy with how it turned out and will definitely make this my go to pasta dish!

Very simple recipe, easy to make and absolutely delicious. However I thought 4 courgettes were a bit too much? Not like it was a problem, but the picture looks like there has been only 1 courgette put into the dish. Any suggestions?

Great recipe, really simple and really delicious. However, I thought 4 courgettes were too much? Not like it was a problem but picture looks like there has been only 1 courgette put in it.

I obviously did something very very wrong! It all turned out far too stodgy and sticky- not at all like the picture or reviews! Think the tagliatelle was too starchy and I should have grated corgettes rather than cutting into slices. Oh well - will try again!!

I made approx. 1/3rd quantity for one person and added a small bit of red onion, 1/2 shallot, 2 mushrooms, pinch of Herbes de Provence and for seasoning, a pinch of Mara dried seaweed - I used 'Shony', but any from the range would do..... delicious! I have a glut of courgettes and this was an excellent way to use a large one up. My quantity made 1 main meal and the remainder will do as a snack, with some freshly cooked tagliatelle. Well done to whoever came up with the original recipe.

This is a fabulous and utterly lovely recipe and also great for playing about with. I would have added fresh thyme but there isn't much in the garden right now, so I chopped up a handful of parsley from a windowsill pot and added with the grated courgette. When I tasted at the "put aside" stage it seemed too sweet for some reason (perhaps sugar had been added to the supermarket bacon I bought?). Whatever, I decided to add a just a few drained sundried tomatoes as sold in a jar by Lidl to balance out the sweetness. Seasoned with ground pepper only - the bacon and the parmesan do the salty stuff. Beautiful! x
