Creamy courgette & bacon pasta

A quick and creamy carbonara-style tagliatelle that showcases delicious courgettes contrasted with cream and pancetta

Method

  1. Heat the olive oil in a large frying pan and sizzle the pancetta or bacon for about 5 mins until starting to crisp. Turn up the heat and add the grated courgette to the pan. Cook for 5 mins or until soft and starting to brown then add the garlic and cook for a minute longer. Season and set aside.
  2. Cook the tagliatelle according to the pack instructions and scoop out a cupful of cooking water. Drain the tagliatelle and tip into the frying pan with the bacon and courgette. Over a low heat toss everything together with the crème fraiche and half the Parmesan adding a splash of pasta water too if you need to loosen the sauce. Season to taste and serve twirled into bowls with the remaining Parmesan scattered over.

    Made this last night for tea .. is quick, easy, and absolutely scrummy. My 14 year old daughter loved it, and my Husband was so enamoured that he said he'd eat it again today!! (not that he'll get the chance to - I have another BBC Good Food recipe lined up for tonight!). But, it'll be a regular from now on as it was easily my favourite Pasta dish ever ...

    Will definitely make this again. The courgettes became so creamy and delicious. Forgot to save any pasta water, which I think might have been useful to create more of a sauce.

    This is sooo good. I added a bunch of cherry tomatoes between the courgette and the garlic, which added a nice tang to the dish and I liked grating courgettes as its something I wouldn't typically do, but it works well in things like this. However, this was pretty rich, I think I'd skip the Parmesan next time.

    I initially thought that this wasn't going to taste anything special but I was so wrong! It's absolutely delicious! It tastes so creamy and fills you up, I was even excited to have leftovers for lunch the next day. Will definitely be making this again.

    Made this for dinner tonight. Was very quick and easy, and everyone enjoyed! I had to use only 2 courgette because Norwegian courgettes are enormous this time of year. Made a lovely "green pasta".

    Was yummie. wasn't sure when i was cooking the courgettes but all turned out ok. i whacked the courgettes in the food processor & they went a lil mushy but think they go like that once cooked anyway. Tastes like carbonara
