Method

  1. To make the dressing, whizz together the garlic, chilli and sugar in a food processor to make a rough paste. Add the fish sauce and lime juice, then season to taste.

  2. Fry the shallots in the oil for around 5 mins or until they are crisp and golden brown. Then remove with a slotted spoon and drain on kitchen paper. Toss the apple in the lime juice, then mix with the tomatoes and dressing. Spoon onto plates and top with the peanuts, crisp shallots and coriander.

The dressing was a bit too spicy for my taste although I do love my spice.. If we make it again we'll deseed the chili's.

THis salad is stunning - really easy to make nd very refreshing accompaniment to a thai curry. the dressing is delicious as before an apple per person is a bit too much. will definitely make this again and again

I had a Thai evening for 8 and made this salad. Sweet & crunchy with a zing and the crispy just fried shallots on top were yummy. It was the perfect accompaniment to the Thai steamed fish. See the menu below, all recipes are from this website. Now about to print this recipe out for my friend who cant wait to eat it again.

This is an excellent recipe and works really well as an accompaniment to Thai or other Asian dishes. Also really easy to prepare. I would say that you need 1 apple per person, I think the recipe calls for slightly more.
