One-pan simple summer chicken

Throw potatoes, courgettes and a whole garlic bulb in with chicken thighs then oven bake for a simple all-in-one supper

Method

  1. Heat oven to 220C/200C fan/gas 7. Pop the chicken, skin-side up, in a large roasting tin with the potatoes. Lightly crush the garlic cloves and nestle among the chicken pieces. Drizzle over the olive oil and chicken stock, then season. Squeeze over the juice from the lemon and pop the empty halves in the tin.
  2. Bake for 45-50 mins, adding the courgettes and chilli 15 mins before the cooking time is up. Remove from the oven when the chicken is cooked through and golden, and the veg is tender. Stir through the basil leaves and serve.

    Summer time in Malta is fantastic, but not for baking in the oven!! I still bake this receipe by putting all the ingredients onto a baking sheet with a piece of aluminuim foil underneath, wrap everything up and cook it on the BBQ! That keeps my kitchen from becoming too hot!

    Made 1/2 quantity for 2 today. Potatoes & garlic from the garden. Easy, very tasty and light on washing up afterwards. Will definitely do this again and again.

    This dish has so much potential and I love the fact you don't need to seal the chicken first, but by the end of the meal, I was finding it a bit too greasey from all the fat given off by the chicken thighs. I would be tempted to trim off any excess skin on the thighs next time or use skin on breasts.

    Good, every day recipe - the lemon worked well with the courgettes and everything cooked to perfection. If anything though, I did find it slightly bland & rather too beige... not sure what might brighten it up...

    Very simple and tasty..Left out the courgettes and the chili though, used dried basil right from the start, and crushed garlic instead of bulbs
