Clams with sherry & chorizo
Steam fresh shellfish with sherry to bring out the sweetness then contrast with spicy Spanish sausage

- Fry the chorizo in a large pan until crisp and the oils are released, then add the shallots and soften. Pour in the sherry and when bubbling over a high heat tip in the clams. Cover and cook for 3-5 minutes, shaking the pan occasionally, until the clams have opened. Stir in the parsley and eat with bread, straight from the pan.
