Pan-fried camembert sandwich

A toasted cheese sandwich that is anything but ordinary - oozing with camembert and topped with cranberry sauce to give it a Christmas kick

Method

  1. Butter bread. Put wedge of camembert or brie on the unbuttered side of one slice of bread. Top with a spoonful of cranberry sauce. Drizzle with a few drops of balsamic vinegar, if you have some.
  2. Put the second slice of bread on top, buttered side out. Fry in a hot non-stick pan, pressing down with a fish slice, for a minute or two on each side, until golden brown and melting. Cut in half and eat straightaway.

    A really tasty (if not very healthy!) lunch: I didn't have any cranberry sauce so substituted tomato chutney - delicious!

    Cor! You couldn't keep the pounds off if you at this too often but lovely comfort food. Would be great after too many bevvies the night before. I used brie instead of camembert and red onion marmalade that I made a while ago (recipe also on this wonderful site). It looked just like the picture. Lovely sarnie.

    This is one of the nicest things Ive eaten over Christmas, it made a change from turkey. I used brie which was lovely. I could eat this everyday!
