Spicy chicken with mango salad

A superhealthy spicy perk-up for chicken

Method

  1. Heat a griddle or frying pan until hot. Rub the chicken with oil, garam masala and a good pinch of salt. Cook for 6 minutes on each side or until slightly charred and cooked through.
  2. Peel and slice the mango into slim wedges. Halve the cucumber lengthways and slice thickly at an angle. Thinly slice the onion. Toss the salad ingredients together with the coriander and pile onto plates.
  3. Mix the soured cream or yogurt with the lime zest and juice, season and dollop beside the salad. Cut the chicken in half or into thirds diagonally, arrange next to the salad and serve with naan bread.

Give it a twist

Try rubbing the chicken with a Cajun or fajita spice mix instead of the garam masala.

    My now retired husband is learning to cook and he tried this using fajita spice mix and soya bifidus instead of yogurt - utterly delicious and very light and fresh - a great summer dish!

    Absolutely lovely - Very refreshing, filling yet light evening meal. My garam masala is cinnamon heavy which worked nicely with the mango. It also went very well with a cold glass of white! I always sprinkle my yoghurt/raita with a tiny amount of cayenne pepper (it looks nice as well) and I added finely chopped cucumber to the yoghurt to bulk it out a little.

    Utterly, utterly divine. I did the chicken in the oven, as I wanted to keep it all low fat and I don't have a griddle pan. 25 mins on a medium to high heat and it was still juicy and lovely. The lime yoghurt mixture was to die for - and I was surprised at how well Coriander and Mango went together! Definitely a do-again. :-)

    Loved this recipe!!! I included baby spinach in the salad & made a dressing with Dijon mustard, honey & white wine vinegar. Also used Cajun spice instead of gram masala. Will definitely be making again, especially during summer
