Wasabi-spiked burgers with pickle relish
For beef burgers with a difference add some heat with Japanese horseradish-flavoured paste and cool with crunchy slaw

- To make the pickle, put all the ingredients in a bowl and leave for 20 minutes, tossing now and again.
- Put the beef, half the wasabi and the grated onion in a bowl. Season really well then mix together and form into 4 burgers.
- Griddle or fry the burgers until cooked through, about 5 minutes on each side. Toast the buns. Mix the mayonnaise with the rest of the wasabi and the jalepeños. Spread on the bottom bun then top with some rocket and the burgers. Top with a pile of the pickle relish and serve.

- 1 small red onion , grated
- 4 crusty buns
- 4 tbsp mayonnaise
- 4 jalapeños from a jar, finely chopped
- 2 handfuls rocket
PICKLE RELISH
- 1 large carrot , peeled, cut into matchsticks
- 50g radishes , cut into matchsticks
- ¼ small cucumber , seeds scraped out, cut into matchsticks
- 2 tbsp rice vinegar
- 1 tbsp golden caster sugar
