Inside-out chicken Kiev

Method

  1. Place the chicken on a baking tray, rub with a little of the butter, season and cook under the grill for 15 mins, turning once until cooked through.
  2. Mix together the remaining garlic butter and breadcrumbs. Remove the chicken from the grill and top each breast with a smear of the breadcrumbed butter. Return to the grill and cook 3-5 mins until the breadcrumbs are golden and the butter melted. Serve any buttery juices, alongside new potatoes and peas or broad beans.

Make it spicy

Stir 1 tbsp korma paste through the breadcrumb mixture, then cook as above.

    Cracking recipe and a no brainer as far as ease of prep is concerned. I normally add extra garlic as a matter of course and am glad I did here. Served with homemade chips and baked beans, as suggested elsewhere, which really worked really well. A comfy 5 stars as far as Im concerned.

    Made it for the family this evening, we all loved it, even my fussy 3 year old daughter!! Served it with peas, sweet corn and broccoli and garlic potatoes - beautiful and so easy. My son scored it 9 out of 10!

    Always comes out perfect. I do not slice chicken breast in half - just flatten with rolling pin. Good with minted new potatoes and roasted veg.

    Swiftly becoming a Friday night regular, served with some homemade potato wedges. Halved the ingredients (only 2 of us), but garlic butter needs 2 cloves to make it work best
