Inside-out chicken Kiev

A quick, easy low fat recipe with just 3 ingredients

Method

  1. Place the chicken on a baking tray, rub with a little of the butter, season and cook under the grill for 15 mins, turning once until cooked through.
  2. Mix together the remaining garlic butter and breadcrumbs. Remove the chicken from the grill and top each breast with a smear of the breadcrumbed butter. Return to the grill and cook 3-5 mins until the breadcrumbs are golden and the butter melted. Serve any buttery juices, alongside new potatoes and peas or broad beans.

Stir 1 tbsp korma paste through the breadcrumb mixture, then cook as above.

    Question is, why do you need the oven on for this recipe? This is a quick 'n' easy, just as tasty alternative to traditional kiev. Goes well with baked beans and homemade potato wedges.

    This was very nice. We had it with Roast Potatos and veg. We used some garlic butter and olive oil to cook the potatos giving the potatos a slight hint of Garlic.

    I halved the recipe for 2 people, but still made my garlic butter with 25g clover and about 3/4 of a garlic clove as I was worried the garlic taste wouldn't be strong enough. It turned out to be just the right amount, and very tasty! I used the oven instead of the grill, and added some cherry tomatoes for the last 15 minutes which went well with it. Also served with jacket potatoes and broccoli.

    These were easy to make and the chicken was moist and tasty with the garlic butter. I cooked in the oven and added to cherry tomatoes and mushrooms to the tray towards the end.

    Cooked this on Fathers Day last Sunday, my dad doesn't do fancy cooking, although he does like garlic, so thought this would be a good recipe to try. Served with new potatoes and salad it went down a treat. The bonus was it's so quick and easy. Will be doing this again (including my dad)

    Made this for dinner today,the only change I made was added a bit more garlic to the breadcrumbs. The whole family enjoyed it and thought it tasted better than a shop bought kiev. So this will be a regular in our house :-)

    I think this is a great store cupboard recipe and is something I fall back on regularly when I haven't had time to go shopping as I always have chicken breasts (defrosted from frozen), garlic, butter and breadcrumbs. I use the chilli and coriander breadcrumbs from Waitrose and serve with sautéed potatoes and steamed veg. It's brilliant.

    I cooked mine in the oven, not the grill...not sure if this recipe has confused the two as it says 'heat the grill' but then doesn't say to use it!! I also added more garlic butter and crushed a couple of garlics, and even then it wasn't overly garlicy - though still very tasty! I also made a small hole in the chicken before cooking and then pushed some of the garlic butter in to add extra taste to the middle of the chicken! Will definitely make again - lovely!
