Italian-style beef stew

Method

  1. In a large saucepan, cook onion and garlic in olive oil for 5 mins until softened and turning golden. Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil. Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash or polenta.
Try

Make it vegetarian

Leave out the beef and cook 1 chopped aubergine and 1 chopped courgette along with the pepper. Finish by sprinkling over some feta cheese.

    I added some gravy to thicken the sauce and cooked it in the oven for about and hour which made the meat really tender. I also had no rosemary so I just used some Italian herbs and extra garlic. YUMMERS :)

    LOVE this!! We dont add the olives and hubs has mushrooms. I also add around 100mls of red wine and some bisto powder (mixed in cold water first - prob one table spoon and a little water) and its gorgeous, really thickens it up. Served with Mashed Potato - AMAZING!

    Made this an it was soo easy, served with sweet mashed potatoes, an we all loved it even my fussy 9 yr daughter, i was soo surprised at how easy it was, as i'm no cook!!!

    OK but i feel needs to be cooked a lot longer to make the meat more tender and to reduce the sauce. I did add a little Lee and Perrins which did work. Tried the Polenta fried - Ugh horrid, pasta or rice would be ideal. Would try again but as above On the plus side very easy to cook, and also nice and healthy.

    made this for the first time on saturday, and it was loved by all, even my 3 yr old!!!! Was really tasty, added a beef stock cube and other veg, and did in the oven.....is now going to be a weekly favourite!!!

    I made this in the slowcooker as I had slightly tougher cuts of meat to cook and added sliced black olives instead of whole ones and it easily fed 4 (admittedly two children but both have healthy appetites). Loved it, we had it with some polenta.

    Absolutely loved this recipe! I added another pepper, some mushrooms and a can of cannellini beans to bulk it up and it served two people 3 very generous portions! I also found it tasted a lot richer the next day, so next time I will be making it the day before we want it! I also agree with others that it needed more seasoning so I added an extra half a sprig of rosemary, an extra clove of garlic and some black pepper.

    Delicious...I added in 2 tins of chopped tomatoes, aubergine, a red pepper and some chilli flakes to give it a kick. Goes well with rice and mash. Super healthy and tasty!

    My boyfriend made this last night and it was YYYummy! He added a beef stock cube, a wee drop of red wine and some mushrooms, a green pepper and carrots. He simmered it for an hour and served with roast potatoes and puff pastry. Less healthy but very tasty.

    dead simple to make and it smells yummy cooking - the comments on here about blandness and lack of flavour have been taken on board and I have dabbled around with what I have in the kitchen so we will see what happens. Tummy rumbling......
