Italian-style beef stew

Method

  1. In a large saucepan, cook onion and garlic in olive oil for 5 mins until softened and turning golden. Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil. Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash or polenta.
Try

Make it vegetarian

Leave out the beef and cook 1 chopped aubergine and 1 chopped courgette along with the pepper. Finish by sprinkling over some feta cheese.

    RLefever - I cooked my beef strips beforehand in half a beef stock cube because I like it to fall apart. Then when I added it to the rest of the ingredients, I added a splash of Tabasco for a kick and plenty of black pepper. Maybe that will work better for you. Recipies - I don't like Rosemary as it's too strong for me, try oregano instead, it's more Italian too!

    Made this tonight for tea and it was gorgeous! Definately will be making this again. I added two tins of tomatoes and put it into the oven to cook the meat until tender. Served it with homemade tomato and parmesan bread cakes and steamed broccolli.

    After the allotted cooking time, I found it to be very tomato'y and the very thin, so I added 100g couscous (to soak up the tomato juices) / 50g chickpeas and 50g apricots so it is now an Italorrcan !!!!. Yet to try it and see what it tastes like !!!!

    Good recipie - delicious! I cooked for longer than stated and added some fresh beef stock and mixed herbs. Serverd with steamed spinich. I think mushrooms may be a good addition and also I would use a better cut of steak so its more tender.

    I made this the other night and it was a HUGE success. I left out the yellow pepper and added slices of courgette instead. I left it simmering for a lot longer.. delicious!!!

    I made this last night and added Tomato puree,some mixed herbs and red wine.I also transferred it to the oven and cooked for about an hour and the beef came out very soft.It was great,would highly recommend.

    I tried this last night and it was fab, I also put in over for an hour after softing the onions with garlic over a pan first. Might have been better to brown the beef to make it softer. I added hot peppers, beans, carrotts, red wine and some extra paprika ( had a great kick ) also served with a little bit of brown rice. It definitley doesnt serve 4 as stated. I almost ate the lot it was so nice.. If it did serve 4 I certainly made a pig of myself.. No complaints haha

    Enjoyable, quick and easy to make if you don't slow cook it. Wasn't keen on the addition of peppers, next time would replace with green beans and mushrooms. We took peoples advice and added the stock cube, but we didn't seem to need the flour.

    Made this dish last night- lovely but the beef that i bought was stir fry beef from ASDA and needed to cook for at least an hour and a half. Would deffo recommend this for anyone who likes warm, hearty and healthy food! Will be making this again for sure!

    really really really enjoyed this stew which was more like a casserole to me,had carrots and peas and used beef stock and cornflour to thicker the sauce and pop it in the oven for 1 hour so the beer was nice and tender.yum yum will defo be making this again :)

    A nice beef stew recipe.I used braising steak so put it in the oven for 2 hours to make the meat really tender, this also made the sauce a nice thick consistency.I added a chopped chilli, extra veg and some anchovy fillets (just from a tin) which melted in and gave a nice depth of flavour, and served with home-made soda bread. We found that it didn't quite serve 4, just about 3 portions which would make the calorie content a bit out of kilter. Overall very nice, will do again

    i cooked this with passata instead of tins of toms - added a pinch of paprika & a tsp of pesto to the sauce as well... it's in the oven for 2 hours now & smells luvly :)

    I didn�t find it as exciting as I would have liked to, but I think some chilli in there would make it perfect. Also, it wasn�t thin, as other people said it was.

    Made this for my other half last night; added chorizo to start with, left out the olives and added some smokey paprika powder and loads of pepper to make the whole thing less sweet. Also had to let it reduce for a bit longer; served with new potatoes, delicious!

    Both me and my partner liked the flavours of this dish although I thought the steak could have done with being more tender but than again I am very fussy. I added a tsp of paprika and chilli powder and cooked in the oven for an hour, the sauce was thick enough and I served it with crusty bread. Will make it again.

    Quick and easy, I added two yellow pepper and next time I think I will roast them first to give the dish a little more depth, I also added a courgette, beef stock and paprika (as others had suggested).
