Salmon & rocket pasta

Method

  1. Heat oil in a non-stick pan and cook the salmon, skin-side down, for 5 mins. Turn over and continue to cook for 4 mins more until the salmon is cooked through. Remove from pan, leave to cool, then flake the fish into large chunks, discarding skin.
  2. Cook tagliatelle according to pack instructions. Scoop out half a cup of cooking water, then drain and return to the pan. Toss in the salmon and remaining ingredients, loosening with cooking water, if the mixture is too thick. Serve immediately.

    This was a very easy but effective receipe. I used chopped baby spinach instead of rocket but still made a really nice easy tasty dish.

    Made a variation of the recipe using smoked salmon and a squeeze of lemon juice and had it as a salad. It was delicious, even if it came about because I read the recipe incorrectly before I dashed off to the shops, otherwise I would have bought normal salmon and a lemon. The best thing of all is that there is some left over for lunch tomorrow.

    Not bad, good subtle flavours but needed a bit more of a punch, maybe some cherry tomatoes and a bit of garlic sauteed in the creme fraiche. but filling and satisfying!

    great recipe, it works, it is easy... I used normal salmon and will do it again. It is important to to stir in rocket at the end, so it doesn't wilt.

    I just added in some Smoked Cod instead of salmon. But smoked salmon aswell would make a nice suggestion. Then i added a bit of feta and some oven cooked tomatoes with thyme. YUM!!!

    After making this once I then switched to using smoked salmon which I think tastes much better and makes this recipe even easier!
